The Butternut and quinoa squash soup is an excellent evening meal accompaniment. Best served while hot. Here is how I prepare my soup.
- 1 white onion
- 4 cloves of minced garlic
- 1 cup of rinsed quinoa
- 1 tablespoon of curry powder
- ½ teaspoon salt
- ½ tablespoon of ground cumin
- ½ teaspoon of black pepper
- 4 cups of Massel vegetable broth
- Extra virgin coconut oil
- Plain Yogurt for topping
Spray the frying pan with the extra virgin coconut oil, add the chopped onion. Cook for 8 minutes.
Add garlic, salt, curry powder, black pepper, cumin, and quinoa to the pan and cook for 5 minutes while stirring.
Add vegetable broth, squash, and reduce to low hit for simmering. Leave it for about 30-35 minutes.
Switch off the heat source and allow it to sit for 5 minutes before uncovering to cool slightly for the same amount of time.
At this point, I get out my Ninja blender and puree in batches.
I then add salt to taste and serve with my plain yogurt.
It takes me about an hour to prepare my hot butternut and quinoa soup for 6 people.

This vegan ginger carrot soup offers an outstanding balance of island flavors thanks to the Ninja Foodi Hot & Cold blender, which preserves the original taste of all the ingredients I use.
- 1 pound of sliced carrots
- 2 stalks of celery
- 4 cups of freshly made vegetable broth
- 1 chopped yellow onion, medium.
- 2 tablespoons of grapeseed oil
- 6 ounces of chopped russet potatoes
- 3 tablespoons of finely chopped fresh ginger
- 1 tablespoon of brown sugar
- ¼ glass of fresh lime juice
- ½ cup of coconut milk
- 1 ½ tablespoon of Thai green curry
- 1 tablespoon of sea salt
- ½ tablespoon of black pepper
Pour the grapeseed oil into a pot and place the pot over medium-high heat.
Add the chopped carrots, onions, celery, and ginger to the pot. Sauté for about 10 minutes until they slightly soften.
Stir and simmer for 10 minutes before adding potatoes, then simmer for a further 5 minutes.
Pour the mixture into the Ninja blender and puree until completely smooth
Pour the soup back to the pot and add the rest of the ingredients to taste.
It takes about 50 minutes to prepare and cook the soup. Best served warm!
