Ingredients:

  • 1 ½ Cups Milk
  • 1/3 Cup Water
  • 2 Small Potatoes (Quartered)
  • ½ Cup Chopped Onion
  • 1 Carrot (Halved)
  • 1 Celery Rib (Halved)
  • 1 Cup Cut Cauliflower
  • 1 ½ Vegetable Bouillon Cubes
  • 1/3 Cup Vegetable Cooking Water

Instructions:

  • The first step is to cook your potatoes. You can do this in the microwave for about 8 minutes. That will make them warm and squishy and ready for the recipe.
  • Second, place your onion, your carrot, your celery, and your cup of cauliflower into a small saucepan and cover with water. You then need to bring the saucepan to a boil. Once the saucepan has boiled, reduce the heat to medium and continue cooking until your vegetables are tender.
  • Now it’s time to set aside one full cup of cooked vegetables. At the same time, place the rest of your vegetables with the bullion, the potatoes, and the milk into your Vitamix blender. If you don’t have a Vitamix blender, feel free to use any powerful blender.
  • Select variable 1 and begin to slowly blend. You will need to gradually increase the speed until you reach variable 10. After variable 10, switch the blender to high.
  • On high mode, blend your entire mixture for about 3 minutes, continuously using the tamper to push the ingredients deeper into the blades.
  • After the three minutes, add the cup of your reserved vegetables into the mixture along with your 1/3 cup of water. You can then blend for an additional 5 seconds. Don’t go over the five seconds or you will lose a lot of the chunkiness of this creamy onion soup. If you are not using a Vitamix blender, you may need to blend for 10 or 15 seconds.
